Bacon & Cheese Potato Skins

These are simply delicious…this recipe serves four – so adjust accordingly!

Ingredients:

4 Baking Potatoes

150g Grated Cheddar

5 Rashes of Bacon – cooked and cut into small pieces

3 Spring Onions – chopped

Seasoning – salt, black pepper

And sour cream to serve

Ok- bake the potatoes in a preheated oven (Gas Mark 6, 200C or 400F ) until crispy – once cooked, cut each potato in half lengthways and scoop out the flesh of each skin.

Lightly butter the inside of each potato skin – refill the skins with the cooked bacon pieces and cheddar cheese. Then lightly season and sprinkle the spring onions in the top of the skins. Once this is all completed, grill the skins until golden brown – serve hot with sour cream.

Sweet Bake Cheesecake

Although we are totally committed to cakes made of whole delicious English cheeses – sometimes you can’t resist a bit of traditional sweet cheesecake!

Ingredients:

1 lemon – grated zest and juice

400g – soft white cheese

150g – digestive biscuit

150ml -  sour cream

200g – caster sugar

40g – plain flour

5g – butter

4 eggs

 Preparation time 45 minutes:

  • Preheat the oven to Gas mark 3 /170  ̊C
  • Mix together biscuit crumbs and butter to create the base. Press the mixture firmly into a cake tin – roughly 1cm thick
  • Beat together soft white cheese and sugar until smooth. Add the eggs one at a time and mix in gently
  • Stir in the flour, sour cream, lemon zest and juice
  • Add mixture to prepared base and bake for 1 hour until firm – leave to cool in oven for about 1 hour, and then chill before serving.

Cheese recipe – I had a fantastic lunch in London the other week and as it was a cheesy meal I think it is only right I report back.

Fried Mozzarella

 What you need:

  • Mozzarella cheese – just one pack is enough to serve 2
  • pinch of salt and black pepper
  • 2 eggs
  • 3 tablespoons of plain flour
  • Frying oil
  • Fresh breadcrumbs made in the food processor

 

What to do:

  • Cut the cheese into four slices
  • Get three separate bowls:  in one beat the two eggs, in another put three heaped tablespoons of plain flour with salt & pepper and finally in the third put the breadcrumbs
  • Next, heat the oil in a frying pan – make sure it is hot hot – test by dropping in a few breadcrumbs, they must sizzle immediately.
  • Then get the sliced mozzarella, coat it first in the flour bowl, then dip into the egg followed by the breadcrumbs.
  • Fry the mozzarella in the pan until it is golden brown.
  • Serve immediately while hot.

Ours was served up with a wild rocket salad, dressed with balsamic – tasted delicious.
